  • 8 ripe peaches , peeled , pitted and sliced into thin wedges
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cut into small pieces
  • 1/4 cup boiling water
  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Directions:

Preheat the oven to 425 degrees F (220 degrees C) .
In a large bowl , mix together the sliced peaches , 1/4 cup granulated sugar, 1/4 cup brown sugar , 1/4 teaspoon cinnamon, nutmeg, lemon juice , and cornstarch. Toss the mixture until the peaches are evenly coated, then pour it into a 2 quart baking dish. Bake in the preheated oven for 10 minutes.
While the peaches are baking, in a separate large bowl, whisk together the flour , 1/4 cup granulated sugar, 1/4 cup brown sugar, baking powder, and salt . Use your fingertips or a pastry blender to cut in the butter until the mixture has a coarse, crumbly texture. Stir in the boiling water until the mixture is just combined.
Remove the peaches from the oven and drop spoonfuls of the topping over them. Sprinkle the entire cobbler with the cinnamon-sugar mixture . Bake until the topping is golden brown , for about 30 minutes.
